Katie's Quick Dinner Rolls
You will need a standard muffin tin for this recipe.

1 C. Warm Water (110-115 degrees)
1 pkg. Active Dry Yeast
2 Tbls Sugar
2 1/4 Cups All Purpose Flour
1 tsp Salt
1 Egg
2 Tbls Olive Oil
In a medium/large bowl (you will use the same bowl the entire time), dissolve yeast in water.
Stir Sugar, 1/2 of the Flour and Salt into the yeast mixture. Beat with a spoon until smooth. Add Egg and Olive Oil, mix together. Beat in the rest of the Flour until smooth. Scrape down the sides of the bowl, cover bowl with a dishtowel and put in a warm place. Let rise until doubled in size (about 30 minutes).
Grease 12 cup muffin tin. Stir down the raised dough and spoon into muffin cups until each is 1/2 full. Rise again in a warm place until dough rises to the top of the cups 20-30 minutes).
Bake at 400 degrees for 15-20 minutes until golden brown.

Try not to eat them all yourself! They taste like mini loafs of homemade bread.

Yes, I would be interested in what you have to do to get them to rise at elevation. I don't know much about baking at elevation.
Mine were taking a while to rise so I put the bowl with towel over it close to the heater to speed things up...BINGO! The ideal temp for rising is 85 degrees and my house is never that warm, are you kidding me?

they sound lovely - i wonder if they'd work without eggs? i just can't stand the taste/smell of eggs in anything. hmm. i've been making pizza dough from scratch - have a great recipe and love making it! again, easier than bread for sure... for some reason it turns out while my bread usually is a hard rock...

I bet you could leave egg out, I hate the taste too, I couldnt taste it in this though since there were 12 rolls and only one egg. Give it a try and let me know. If it were me, I would use 1/4 cup of soy/rice milk in place of the egg so there is enough moisture.
