My latest had the following in it:
- Olive Oil (to saute in the beginning)
- 2 Bay Leaves
- 2 Leeks
- 2 Cloves of Garlic
- 2 Large Carrots
- 4 Ribs of Celery
- 3 Yellow Potatoes
- 1 Crown of Broccoli
- 1 Bunch of Asparagus
- Veggie - better then broth stock
- Salt and Pepper to taste
Sauteed the first 4 veggies and then added stock, simmered for about an hour, turned on very low and let it go for another hour. An hour before dinner, I turned it back up to a simmer and then added the potatoes and then 30 minutes later I added the broccoli and asparagus and cooked until soft (about 20 more minutes).
Serve with bread, biscuits or your favorite rolls (recipe in next post)

can i come over for dinner? please? aurora loves vegetable soup - it's the only way she'll eat her vegetables, if they're simmered in broth first, so we eat lots of soup, even though it's summer - but it's finally autumn-like here so we're planning on having soup daily! yum!
